Grilled Strip Steaks With Olive Oregano Relish Recipe

Ingredients
  • 1/3 cup drained kalamata or other brine-cured olives, pitted and coarsely chopped
  • 2 tablespoons finely chopped red onion
  • 2 teaspoons minced fresh oregano
  • 2 teaspoons extra-virgin olive oil
  • 2 ( 3/4-inch-thick) boneless beef loin (strip) or rib-eye steaks ( 1/2-pound each)

Directions
  1. Prepare gas or charcoal grill. (Or, oil a ridged grill pan.)
  2. While grill is heating, prepare relish: stir together olives, onion, oregano, oil and salt and pepper to taste.
  3. Pat steaks dry and season with salt and pepper.
  4. Grill steaks on an oiled rack set 5 or 6 inches over glowing coals (or in grill pan over medium-high heat) about 4 minutes on each side for medium-rare.
  5. Serve steaks topped with relish
