How to make it

  • Prepare gas or charcoal grill. (Or, oil a ridged grill pan.)
  • While grill is heating, prepare relish: stir together olives, onion, oregano, oil and salt and pepper to taste.
  • Pat steaks dry and season with salt and pepper.
  • Grill steaks on an oiled rack set 5 or 6 inches over glowing coals (or in grill pan over medium-high heat) about 4 minutes on each side for medium-rare.
  • Serve steaks topped with relish
