Hawaiian Sweet Potato Pie

HAWAIIAN SWEET POTATO PIE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Grimes Estate in Bryan, Texas in 1988.
Ingredients
- 2 large peeled sweet potatoes baked shopping list
- 1/2 stick salted butter shopping list
- 1/2 cup light brown sugar shopping list
- 1/2 cup granulated sugar shopping list
- 2 large eggs beaten shopping list
- 1/2 teaspoon cinnamon shopping list
- 1/4 teaspoon nutmeg shopping list
- 1/2 tablespoon vanilla extract shopping list
- 5 ounce can evaporated milk shopping list
- 1/4 cup crème of coconut shopping list
- 1/2 teaspoon salt shopping list
How to make it
- Mix all ingredients except eggs with whisk or mixer until creamy.
- Add beaten eggs to mixture then stir well and pour into unbaked pie shell.
- Bake at 350 for 1 hour then cool thoroughly before slicing.
