Peachy Afternoon Tea Loaf Recipe
This lovely peach loaf is a Southern girls best friend. Always a delight when friends pop in.

Ingredients
  • 2-1/2 cups all-purpose flour
  • 1 cup sugar
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. nutmeg
  • 1-1/2 cups fresh peaches, peeled and finely chopped
  • 1 Tbsp. lemon juice
  • 1/3 cup oil
  • 1/3 cup milk
  • 2 tsp. vanilla extract
  • 2 large eggs
  • 1/3 cup pecans, finely chopped

Directions
  1. Heat oven to 350 degrees.
  2. Grease a 9 x 5 loaf pan.
  3. In a large bowl, combine flour, sugar, baking powder, salt and nutmeg.
  4. In a medium sized bowl, combine peaches and lemon juice.
  5. In another bowl, combine oil, milk, eggs and vanilla.
  6. Add oil mixture to flour mixture and stir just until dry ingredients are moistened.
  7. Do not overbeat.
  8. Fold in peaches and nuts.
  9. Spoon into greased loaf pan.
  10. Bake for 55 to 60 minutes or until top is golden brown and center springs back when lightly touched / test for doneness with a toothpick.
  11. Cool in pan on wire rack for 10 minutes.
  12. Serve warm with either fresh whipped cream or vanilla ice cream.
  13. If you're watching your calories, a sprinkling of confectioners' suger is just fine.
