Chili Shrimp

- 3 tbs olive oil shopping list
- 2 shallots chopped shopping list
- 2 chopped garlic cloves shopping list
- 1 chopped fresh red chili shopping list
- 1 pound seasoned riped tomatoes, peeled, seeded and chopped.(canned can work well here also, but I found I need to add a little sugar to them to cut the acidity, and tartness) shopping list
- 1 tbs tomato paste shopping list
- 1 bay leaf shopping list
- 1 fresh thyme sprig shopping list
- 6 tbs dry white wine shopping list
- 4 cups peeled and cooked large shrimp shopping list
- salt and pepper shopping list
- coarsely torn basil leaves for garnish shopping list
How to make it
- Heat oil in sauce pan and fry shallots garlic and chili until garlic starts to brown.
- add tomatoes, tomato paste, bay leaf, thyme, wine and seasoning.
- Bring to boil. Reduce heat and cook for 10 minutes, stirring occasionally until sauce has thickened. Remove the herbs.
- Stir shrimp into sauce and heat through for a few minutes.
- Taste and adjust seasoning
- Scatter basil leaves over top and serve immediately.
