How to make it

  • Heat oil in sauce pan and fry shallots garlic and chili until garlic starts to brown.
  • add tomatoes, tomato paste, bay leaf, thyme, wine and seasoning.
  • Bring to boil. Reduce heat and cook for 10 minutes, stirring occasionally until sauce has thickened. Remove the herbs.
  • Stir shrimp into sauce and heat through for a few minutes.
  • Taste and adjust seasoning
  • Scatter basil leaves over top and serve immediately.
