Jetts Recipe for Senator Russells Sweet Potatoes

Sweet potatoes baked with a delicious crumbled nut topping that can be used as a side dish or even a dessert. I have NO idea who Senator Russell is!! LOL If anybody knows him tell him I like his sweet potatoes!!
Ingredients
- 3 Cups mashed sweet potatoes shopping list
- 1 Tablespoon vanilla shopping list
- 1 Cup granulated white sugar shopping list
- 2 eggs shopping list
- 1/2 Cup butter shopping list
- Topping shopping list
- 1 Cup light brown sugar shopping list
- 1 Cup chopped nuts shopping list
- 1/3 Cup flour shopping list
- 1/3 Cup butter shopping list
How to make it
- Mix potatoes with vanilla, white sugar, eggs and 1/2 cup butter.
- Pour into buttered casserole dish.
- For topping - mix ingredients together and sprinkle on top of the sweet potato mixture.
- Double the recipe since this does freeze well.
- Bake at 350 degrees F

I make a similar dish at Thanksgiving and Christmas..but..think I should fix it now to
go with my fruit cake in JULY!!
