Senator Russells Sweet Potatoes Recipe

Ingredients

3 Cups mashed sweet potatoes

1 Tablespoon vanilla

1 Cup granulated white sugar

2 eggs

1/2 Cup butter

Topping

1 Cup light brown sugar

1 Cup chopped nuts

1/3 Cup flour

1/3 Cup butter

Directions

Mix potatoes with vanilla, white sugar, eggs and 1/2 cup butter. Pour into buttered casserole dish. For topping - mix ingredients together and sprinkle on top of the sweet potato mixture.

Double the recipe since this does freeze well.
