Senator Russells Sweet Potatoes Recipe

Sweet potatoes baked with a delicious crumbled nut topping that can be used as a side dish or even a dessert.

Ingredients
- 3 Cups mashed sweet potatoes
- 1 Tablespoon vanilla
- 1 Cup granulated white sugar
- 2 eggs
- 1/2 Cup butter
- Topping
- 1 Cup light brown sugar
- 1 Cup chopped nuts
- 1/3 Cup flour
- 1/3 Cup butter
Directions
- Mix potatoes with vanilla, white sugar, eggs and 1/2 cup butter. Pour into buttered casserole dish. For topping - mix ingredients together and sprinkle on top of the sweet potato mixture.
- Double the recipe since this does freeze well.
