An absolutely juicilicious way to serve a NY Strip roast. We really loved it but like mine more rare than medium.

Ingredients
  • REST TIME 20 MIN.
  • ---------------------------
  • 5 lb New York Strip Roast
  • 7 oz container sweet dark cherries (drained)
  • 1 cup frozen red sweet cherries
  • 2 tblsp chipolte peppers in adobo
  • 2 tblsp molasses

Directions
  1. Pre-heat oven to 500 d. F
  2. --------------------------
  3. Combine cherries, chipolte peppers and molases in a blender.
  4. Divide sauce, reserving half for glaze and half for a serving sauce.
  5. Place roast fat side up in a roasting pan and season with salt and pepper.
  6. Place in pre-heated oven for 10 minutes.
  7. Reduce hea to 350 dF. and brush roast with a thin glaze of cherry sauce.
  8. Repeat every 10 minutes until the roast reaches desired doneness
  9. (135 degrees for med. rare)
  10. Remove roast and let rest for 20 minutes.
  11. Slice across the grain and serve with reserved sauce.
