Chicken Adobo Recipe
Adobo is the Philippines national dish. Adobo is frequently made with pork, but the vinegar and garlic seasoning also goes well with chicken and turkey. I sometimes use 1/2 chicken, 1/2 pork in this recipe.

Ingredients
  • 3 lbs chicken thighs and legs
  • 1 lb small mushrooms
  • 1 onion, sliced
  • ½ C. white wine vinegar
  • ½ C. soy sauce
  • ½ tsp peppercorns, crushed
  • 1 tsp brown sugar
  • 5 garlic cloves, crushed
  • 3 bay leaves

Directions
  1. Combine all ingredients in a pan, cover, and marinate 1 to 3 hours.
  2. Bring to a boil, then lower heat and simmer for 30 min.
  3. Uncover and simmer until sauce is reduced and thickened, and chicken is tender, about 20 more min.
  4. Serve with white rice.
