Creamy Mango Cheescake

- 1 1/4 cup rolled oats shopping list
- 3 tbs margarine shopping list
- 2 tablespoons honey shopping list
- 1 large ripe mango shopping list
- 1 1/4 cups light cream cheese shopping list
- 2/3 cup low fat plain yogurt shopping list
- finely grated rind of 1 small lime shopping list
- 3 tbs apple juice shopping list
- 4 tsps gelatin shopping list
- fresh mango and lime slices to decorate shopping list
How to make it
- preheat oven to 400
- mix together oats, margarine and honey
- press in bottom of 8 inch, loose-bottomed cake pan
- bake for 12-15 minutes
- Cool.
- Peel, pit and coarsely chop mango
- Blend in blender with cheese, yogurt and lime rind until smooth.
- Heat apple juice until boiling and dissolve gelatin into it.
- Stir into cheese mixture
- Pour into pan and chill until set
- Decorate with mango and lime if desired
