PORK CHOPS IN APPLE GRAVY This recipe came from an estate sale. I obtained it when I purchased the family collection from the Sparks Estate in Allen, Texas in 1984.

Ingredients
  • 8 pork chops
  • 1/4 cup butter
  • 1 tablespoon finely minced garlic
  • 1/3 cup flour
  • 1 tablespoon salt
  • 1/8 teaspoon black pepper
  • 3 cups boiling water
  • 1 cup applesauce
  • 1 tablespoon lemon juice

Directions
  1. In large skillet brown pork chops well on both sides in butter then arrange in casserole dish.
  2. Sauté garlic in fat and butter left in skillet.
  3. Add to this the flour, salt and pepper then mix well.
  4. Pour in boiling water and cook stirring constantly until mixture thickens and boils.
  5. Remove from heat and stir in applesauce and lemon juice.
  6. Pour this over chops and cover then bake at 425 for 1-1/2 hours basting occasionally.
