Eggless Pineapple Upside Down Cake Recipe

Ingredients

CAKE

2 cups flour

1 cup sugar

1/2 cup melted butter

1 cup yogurt

1 tsp rose water

1 heaping tsp baking soda

1/2 cup pineapple juice from can

1 tbsp vinegar

1 can of pineapple, sliced

CARAMEL

1/2 cup sugar

1/4 cup water

1 tsp lemon or lime juice

Directions

Preheat oven to 350 degrees

In a large bowl, put the flour and sugar; mix

To mixture, add: melted butter, yogurt, rosewater, baking powder and pineapple juice

batter should not be too thick

grease a pyrex pan

CARAMEL

mix together the sugar and water in small saucepan

let simmer on low until it starts to turn amber in color

add the lemon juice and stir until it becomes a medium dark amber

place the pineapple sliced pineapple on the bottom of the pyrex

add the caramel syrup on top

pour the cake batter on top of the pineapple and caramel

bake in the preheated oven for 45 minutes
