This dish puts a Garlicky spin on this party favorite. Goes perfectly with any kind of crusty bread, Livens up any party.

Ingredients
  • 10 Roma tomatoes (or 5 large garden tomatoes) diced (you can seed and peel if you wanna be fancy)
  • 4-6 large garlic cloves finely diced
  • 3 heaping tablespoons of fresh chopped basil
  • 3 tablespoons of good extra virgin olive oil
  • 1-2 tablespoons balsamic vinegar
  • salt and pepper to taste

Directions
  1. mix all together, and put in the fridge for 30min
  2. serve with any crusty bread.
  3. I've tried several other recipes that call for more ingredients, but I always come back to this one......sometimes the simple ones are better

Nice topping recipe, but bruschetta is actually Italian for "roasted over coals." Bruschetta is the bread toasted and rubbed with garlic. Then the topping is added. No garlic rub, no bruschetta. See Decobabe, from Italy, post in the archives. The topping does look good, however.
