Spectacular Broccoli Lemon Chicken Recipe

Ingredients

1 lemon

1 Tbs.. vegetable oil

4 boneless chicken breast halves

1 can Broccoli Soup

1/2 C. milk

1/8 tsp. pepper

4 C. cooked rice

Directions

Cut 4 thin slices of lemon.

Squeeze 2 tsp. juice from remaining lemon.

Heat oil in skillet.

Add chicken and cook until browned.

Add soup, milk, lemon juice and pepper.

Top chicken with lemon slices.

Heat to a boil.

Cover and cook over low heat 5 min. or until done.

Serve over rice.

This sounds really good, do you know a way to make it weight watcher friendly? I do a lemon chicken almost the same way without the soup and milk. and I use capers and chicken broth. the sauce is thin but very tasty.
