This simple side dish of baked onions will go with beef, pork or chicken.

Ingredients
- 2 pounds of onions - Vidalia, other sweet onions, small pearl onions, yellow or white onions, or purple onions - cut into a large, chunky dice
- 1/2 stick butter, melted
- 3 tablespoons light brown sugar
- 1 tablespoon dijon mustard
- 1/2 teaspoons salt
- 1/4 teaspoon black pepper
- 1/3 cup chopped fresh parsley
Directions
- Preheat oven to 350 degrees;
- Place the onions in a shallow, buttered 1-quart baking dish;
- Combine melted butter, brown sugar, mustard, salt and pepper and pour over the onions;
- Bake the onions until they are browned and well heated throughout, about 40 minutes;
- Sprinkle with parsley before serving.
