Dungebess Crab Bisque Recipe
As a first course, it's hard to beat. If you're not a WestCoaster, you can substitute your local type of crab but if you can get dungeness, do.

Ingredients
  • 1 tbsp minced shallot
  • 2tbsp butter
  • 2tbsp flour
  • 2 cups chicken broth
  • 1/4 cup tomato paste
  • 2 cups whipping cream
  • 1 lb. crab meat
  • 2 tbsp sour cream
  • 1tbsp chopped fresh parsley

Directions
  1. Saute shallot in butter over medium heat 2 or 3 minutes until soft. Remove fron heat and stir in flour until blended. Return to heat and cook until bubbly. Gradually add chicken broth and tomato paste and whisk until smooth.
  2. Add whipping cream and crab. Bring to boil, reduce heat and simmer 3 or 4 minutes. Garnish each serving with sour cream and parsley.
