How to make it

  • marinade fish with salt, pepper and egg yolk for 15 minutes, coat with flour, deep fried until golden brown
  • bring stock and water to the boil, add bamboo shoots, carrots, salt, black vinnegar, soy sauce, salt, dashi, crab meat, sook for around 15 minutes
  • taste, if it's not sour add alittle vinegar, it should be alittle sour
  • if it's too sour add alittle sugar
  • add bean sprouts, pepper, stirr well to mix everything
  • add egg, stirr well add cornstarch mixture, stirr well, make sure it's well mixed
  • serve in bowls, put fried fish on top, garnish with coriander
