Ingredients
  • 1 fish fillet, cut into strips (like fish & chips)
  • 1 egg yolk
  • salt & pepper to taste
  • flour
  • shredded crab meat (optional)
  • 3 cups of stock
  • 3 cups of water
  • 3 tbs of black vinegar
  • 1 tbs of soy sauce
  • 1 teaspoon of pepper
  • salt to taste
  • pinch of hon dashi
  • 100 grams of shredded bamboo shoots
  • 50 grams of shredded carrots
  • 50 grams of bean sprout
  • 1 egg, beaten
  • 1 tbs corn starch mixed with 5 tbs of water
  • corriander

Directions
  1. marinade fish with salt, pepper and egg yolk for 15 minutes, coat with flour, deep fried until golden brown
  2. bring stock and water to the boil, add bamboo shoots, carrots, salt, black vinnegar, soy sauce, salt, dashi, crab meat, sook for around 15 minutes
  3. taste, if it's not sour add alittle vinegar, it should be alittle sour
  4. if it's too sour add alittle sugar
  5. add bean sprouts, pepper, stirr well to mix everything
  6. add egg, stirr well add cornstarch mixture, stirr well, make sure it's well mixed
  7. serve in bowls, put fried fish on top, garnish with coriander
