Thai Inspired Peanut Dipping Sauce Recipe

Creamy smooth Thai "inspired" dipping sauce. I say inspired because it's not 100% Thai. I use miso in it and a few other alterations. Still tastes wonderful.

Ingredients
  • 2 cloves of Garlic
  • 2 Tbsp Ginger, finely grated
  • 1/2 cup Creamy Natural Peanut Butter (I only use natural peanut butter no sugar in it.)
  • 1/2 cup hot Water
  • 2 Tbsp White Miso Paste
  • 1 Tbsp Shoyu
  • 3 Tbsp fresh Lime Juice
  • 1 Tbsp Red Chili Sauce or to taste (you can use 1/2 tsp. chili oil if you have it, I don't) Optional

Directions
  1. In small food processor, finely chop Garlic.
  2. Add Ginger and chop some more.
  3. Add peanut butter, hot water, miso, shoyu lime juice and chili sauce (to taste). Puree till creamy smooth.
  4. Chill and serve with Spring Rolls, or use in Thai cooking. Makes a great Satay.
  5. Serve with Vietnamese Shrimp Spring Rolls.
