How to make it

  • With fork, stir together rice, peaches, ½ t. of cinnamon, almond extract and ¼ t. of nutmeg.
  • Turn into greased 2-quart casserole.
  • Stir together coconut, almonds, butter, ¼ t. of cinnamon and remaining ¼ t. nutmeg.
  • Drop by spoonfuls onto rice mixture; drizzle with honey.
  • Bake at 325 for 30 minutes or until toasty brown.

    I'm all about fresh Peaches. Can't wait for them to be in season. Used to live in FL and couldn't wait till the roadside vendors from GA came down with their trucks full of HUGE juicy peaches.
