Ingredients
  • Fillet of Salmon, skin attached
  • teaspoon fresh grated ginger
  • teaspoon extra finely chopped garlic
  • 1/2 cup pure maple syrup
  • teaspoon lemon juice with zest
  • salt and pepper to taste
  • one cedar smoking plank

Directions
  1. soak cedar plank for 6+hrs
  2. mix ginger, garlic, maple syrup, and lemon juice. Heat until hot but not boiling, let cool on stove as the flavors mix.
  3. salt and pepper salmon, place skin side down on plank, place into BBQ so that only 1/4 of the plank is over direct flame, med high heat until smoke is visible, then lower heat to med low, baste the fish several times with the maple glaze until just done. Remove from heat and let sit. Serve with any type of rice.
  4. PS. be sure to cook with the BBQ lid closed so as to infuse the smoke flavor into the fish.
