How to make it

  • Remove and discard shrimp tails, if any are present. Coarsely chop shrimp.
  • In mediumbowl combine shrimp, papaya or mango, mayo, onion, lime peel, lime juice, salt, and pepper. Cover and chill for up to 1 hour.
  • Cut baguette into 4 equal size rolls. Slice in half lenghtwise. Rmove sme of bread from bottom half of each roll, leaving thick shell. Place all rolls, cut side up, on broiler pan or baking sheet; broil 3 to 4 inches from heat for 1 to 2 minutes.
  • Place lettuce leaf on bottom of each roll. Spoon shrimp mixture onto lettuce; sprinkle wth coconut. Place top of roll on top.

    Looks good, but the man won't eat it. Will have to try when my mom comes over- we like shrimp and coconut, two things he really hates :)
