Japanese Benedict

- 1 egg shopping list
- 1/2 bagel (I topped with hummus) shopping list
- 1 shiitake mushroom, sliced shopping list
- pinch chopped chive shopping list
- 1/2 tsp miso paste shopping list
- Drizzle water shopping list
- sriracha or other chili sauce shopping list
How to make it
- Mix a bit of water with the miso paste and chili sauce. I also added the mushroom stem because I hate to waste it.
- Poach egg and prepare toast so they are done about the same time
- Lightly poach the mushroom (I used the egg water and held the mushroom in a laddle)
- Add any topping to toast (hummus, butter...) and place the poached egg on top
- Decorate the top of the egg with mushroom slices, chive, and miso sauce
