How to make it

  • Mix a bit of water with the miso paste and chili sauce. I also added the mushroom stem because I hate to waste it.
  • Poach egg and prepare toast so they are done about the same time
  • Lightly poach the mushroom (I used the egg water and held the mushroom in a laddle)
  • Add any topping to toast (hummus, butter...) and place the poached egg on top
  • Decorate the top of the egg with mushroom slices, chive, and miso sauce
