Ingredients
  • 1-1/3 C. Butter Flavor Shortening
  • 2/3 C. confectioners' sugar
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. almond extract
  • 2-1/4 C. All-Purpose Flour
  • 1/8 tsp.salt
  • 1 C. finely chopped pecans
  • Additional confectioners' sugar

Directions
  1. In a bowl combine shortening, confectioners’ sugar, vanilla and almond extracts; beat until light and fluffy.
  2. Add flour, salt and pecans; mix well.
  3. Cover and refrigerate at least 2 hours.
  4. Preheat oven to 325°F.
  5. Shape dough into 1- to 11⁄2-inch balls.
  6. Place 2 inches apart on ungreased baking sheets.
  7. Bake 25 minutes or until edges of cookies are light brown.
  8. Roll warm cookies in confectioners’ sugar.
  9. Remove to cooling rack.

Those look like what I've always known as Danish wedding cookies.


I posted a Mexican Wedding Cookies recipe too. I searched first and did not find yours...oh well. I guess I will have to give you a 5 since I know they are really good.


These are soooo good. my mom had these at her wedding and now they are my favorite cookies
