Ingredients
  • 1 package ( 12 ounces) jumbo shells
  • 1/2 pound ground beef
  • 1/2 pound veal
  • 1 pound pork susage
  • 1 carton ( 15 oz )of cottage cheese or ricotta. I use ricotta.
  • 16 oz sharp yellow cheese 9 about 3 cups)
  • parsley,salt & pepper to taste
  • 2 med onion, chopped
  • 3 stalks of celery chopped
  • 2 large carrots, shredded

Directions
  1. Cook the shells according to package directions
  2. Drain, then cover with cold water and set aside.
  3. In a large nonstick skillet saute onions and celery.
  4. Remove celery & onions from pan.
  5. Brown all meats.
  6. Remove meats from pan and place in large bowl.
  7. Make a gravy from the fat in pan.
  8. Add cheeses to the meats onions and celery
  9. Preheat oven to 350 degrees F.
  10. Lightly greese a 9 inch by 13 inch bakinf pan.
  11. Remove the shells from the water, fill with meat and cheese mixture, and place in baking pan.
  12. Cover with gravy.
  13. Bake 40 minutes.
