Carrot Souffle

- 2 lbs peeled carrots shopping list
- 2 Cups sugar shopping list
- 2 teaspoons baking powder shopping list
- 2 teaspoons vanilla shopping list
- 1/2 Cup bread flour shopping list
- 5 - 6 eggs shopping list
- 1 stick plus 2 1/2 tablespoons melted butter shopping list
- confectioners sugar shopping list
How to make it
- Steam or boil carrots until extra soft. Drain well.
- While still warm transfer to mixer bowl and all ingredients except eggs and butter. Beat on low until carrots are mashed.
- Increase speed to medium. Beat 3 minutes or until smooth.
- On low, add eggs one at a time. Beat well after each addition. Gradually add melted butter.
- Place in a 1 1/2 quart greased dish.
- This mixture will rise so pan should be no more than half full.
- Bake about 1 1/2 hours at 350 degrees F or until top is light golden brown.
- Sprinkle with confectioners sugar.
- This souffle will fall after removed from oven.
