How to make it

  • Steam or boil carrots until extra soft. Drain well.
  • While still warm transfer to mixer bowl and all ingredients except eggs and butter. Beat on low until carrots are mashed.
  • Increase speed to medium. Beat 3 minutes or until smooth.
  • On low, add eggs one at a time. Beat well after each addition. Gradually add melted butter.
  • Place in a 1 1/2 quart greased dish.
  • This mixture will rise so pan should be no more than half full.
  • Bake about 1 1/2 hours at 350 degrees F or until top is light golden brown.
  • Sprinkle with confectioners sugar.
  • This souffle will fall after removed from oven.
