This is a wonderful way to sneak those veggies in! Kids love this, adults too. Reminds me of a sweet potato souffle.

Ingredients
  • 2 lbs peeled carrots
  • 2 Cups sugar
  • 2 teaspoons baking powder
  • 2 teaspoons vanilla
  • 1/2 Cup bread flour
  • 5 - 6 eggs
  • 1 stick plus 2 1/2 tablespoons melted butter
  • confectioners sugar

Directions
  1. Steam or boil carrots until extra soft. Drain well.
  2. While still warm transfer to mixer bowl and all ingredients except eggs and butter. Beat on low until carrots are mashed.
  3. Increase speed to medium. Beat 3 minutes or until smooth.
  4. On low, add eggs one at a time. Beat well after each addition. Gradually add melted butter.
  5. Place in a 1 1/2 quart greased dish.
  6. This mixture will rise so pan should be no more than half full.
  7. Bake about 1 1/2 hours at 350 degrees F or until top is light golden brown.
  8. Sprinkle with confectioners sugar.
  9. This souffle will fall after removed from oven.
