Sweet Potato Cornbread Recipe
A twist on traditional cornbread, made vegan stylee by Tanya Barnard and Sarah Kramer in How It All Vegan. Nice with soup

Ingredients
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/8 teaspoon allspice
  • 1/2 cup cornmeal
  • 1 cup sweet potatoes, cooked & mashed
  • 4 tablespoons oil
  • 1/4 cup sweetener
  • 6 tablespoons flax seeds, ground in 18 tablespoons water
  • 1/2 cup non-dairy milk
  • 1/2 tablespoon vinegar

Directions
  1. Preheat oven to 375
  2. In a large bowl sift together the first five ingredients
  3. Stir in the cornmeal
  4. Add the wet ingredients (ie, everything else)
  5. Mix until just combined
  6. Spoon into an oiled round or square loaf pan and bake for 30 minutes.
