This is a very old recipe, from The Magic Cookbook, by Magic Baking Powder, early 1900's. This is fun to make and very tasty.

Ingredients
  • 1 peck tomatoes
  • 1 cup salt
  • Enough Vinegar to cover ingredients
  • 4 onions, chopped fine
  • 3 green peppers, chopped fine
  • 3 red peppers, chopped fine
  • 1 cup brown sugar
  • 1/2 pound mustard seed
  • 1 tablespoon cloves
  • 1 tablespoon allspoon
  • 1 tablespoon white pepper

Directions
  1. SET TIME OVERNIGHT
  2. Slice tomatoes and sprinke with salt.
  3. Let set overnight in large bowl.
  4. In the morning, pour off any liquid and put the tomatoes into large preserving kettle with enough vinegar to cover ingredients.
  5. Add the onions and peppers, sugar and spices.
  6. Let simmer until soft. Put up in sterilized Jars that are air tight.
  7. Use your favorite canning method.

I have to try this! I wonder if I could freeze it in small portions instead of canning?? I may even add a hot pepper and a touch of garlic....please don't smack me!
