1900s Recipe for Governors Steak Sauce for Steak

- 1 peck tomatoes shopping list
- 1 cup salt shopping list
- Enough vinegar to cover ingredients shopping list
- 4 onions, chopped fine shopping list
- 3 green peppers, chopped fine shopping list
- 3 red peppers, chopped fine shopping list
- 1 cup brown sugar shopping list
- 1/2 pound mustard seed shopping list
- 1 tablespoon cloves shopping list
- 1 tablespoon allspoon shopping list
- 1 tablespoon white pepper shopping list
How to make it
- SET TIME OVERNIGHT
- Slice tomatoes and sprinke with salt.
- Let set overnight in large bowl.
- In the morning, pour off any liquid and put the tomatoes into large preserving kettle with enough vinegar to cover ingredients.
- Add the onions and peppers, sugar and spices.
- Let simmer until soft. Put up in sterilized Jars that are air tight.
- Use your favorite canning method.

I have to try this! I wonder if I could freeze it in small portions instead of canning?? I may even add a hot pepper and a touch of garlic....please don't smack me!
