Ingredients
  • 1 lb. pork tenderloin, cut into 1 inch slices
  • salt and pepper to taste
  • 3/4 cup cranberry juice or apple juice (I prefer the apple juice)
  • 2 tsp. spicy brown mustard
  • 1 tsp. cornstarch
  • 1 cup frozen unsweetened dark cherries, thawed
  • Oil to cook pork

Directions
  1. Place pork slices between 2 pieces of plastic wrap and pound to 1/2 inch
  2. Season with salt and pepper
  3. Heat oil and cook pork over medium high heat until just slightly pink in the middle and juices run clear (about 6 minutes)
  4. Remove pork from skillet and cover to keep warm
  5. Mix juice, mustard, and corn starch until blended
  6. Add to skillet and cook and stir until thickened and bubbling
  7. Cook for another minute and add cherries to mixture and heat through
  8. Serve over pork
