How to make it

  • Place pork slices between 2 pieces of plastic wrap and pound to 1/2 inch
  • Season with salt and pepper
  • Heat oil and cook pork over medium high heat until just slightly pink in the middle and juices run clear (about 6 minutes)
  • Remove pork from skillet and cover to keep warm
  • Mix juice, mustard, and corn starch until blended
  • Add to skillet and cook and stir until thickened and bubbling
  • Cook for another minute and add cherries to mixture and heat through
  • Serve over pork
