Pork Tenderloin with Cherry Sauce

- 1 lb. pork tenderloin, cut into 1 inch slices shopping list
- salt and pepper to taste shopping list
- 3/4 cup cranberry juice or apple juice (I prefer the apple juice) shopping list
- 2 tsp. spicy brown mustard shopping list
- 1 tsp. cornstarch shopping list
- 1 cup frozen unsweetened dark cherries, thawed shopping list
- oil to cook pork shopping list
How to make it
- Place pork slices between 2 pieces of plastic wrap and pound to 1/2 inch
- Season with salt and pepper
- Heat oil and cook pork over medium high heat until just slightly pink in the middle and juices run clear (about 6 minutes)
- Remove pork from skillet and cover to keep warm
- Mix juice, mustard, and corn starch until blended
- Add to skillet and cook and stir until thickened and bubbling
- Cook for another minute and add cherries to mixture and heat through
- Serve over pork
