Minestrone With A Twist

- 500g chopped Tinned tomatoes shopping list
- 1 onion peeled and diced shopping list
- 1 potato peeled and diced shopping list
- 2 tablespoons of olive oil shopping list
- 2 cloves of garlic peeled and finely chopped shopping list
- 1 carrot peeled and diced shopping list
- 2 celery sticks diced shopping list
- 100g of dried kidney beans shopping list
- 1 sprig of basil shopping list
- 2 litres of vegetable stock shopping list
- 200 grams of fusilli pasta (the twist!) shopping list
- 1 diced courgette shopping list
- 200g of shredded savoy cabbage shopping list
- salt and freshly ground black pepper shopping list
How to make it
- Cook the pasta and set aside
- Warm the oil in a large soup pot on medium heat.
- Add the onion and garlic, and sauté for 5 minutes
- Add the courgette, celery, carrots, potatoes, salt, pepper, and stock and cook for 10 minutes or until the potatoes are almost done.
- Add the cabbage and beans and simmer for another 5 to 7 minutes, until the cabbage is tender and the beans are hot.
- Serve with parmesan and dry Italian bread.
