Garlic Rubbed Pork Chops Recipe
This rub makes your pork chops flavorful and tender...not the usual dry. Drizzled with the Chipotle Raspberry Sauce gives it an extra kick though it's good all alone.

Ingredients
  • 2 garlic cloves
  • 4 whole black peppercorns (or 1/4 teaspoon black pepper)
  • 1 teaspoon dried oregano
  • 2 1/2 teaspoons salt
  • 1/2 teaspoon olive oil
  • 1/2 teaspoon vinegar or lime juice
  • 4 pork chops

Directions
  1. If you have a mortar and pestle, smash all the ingredients into a paste and rub over pork chops.
  2. If you don't have a mortar and pestle, chop the garlic finely, sprinkle the salt over top. Use the side of a wide knife to work the salt into the garlic so that it forms a paste. Incorporate the rest of the ingredients with the garlic salt mixture. Rub over pork chops.
  3. Allow rub to "marinate" chops for a few hours or over night.
  4. Grill, broil, or pan cook chops to your liking.
  5. Drizzle with the Raspberry Chipotle Glaze.
