This is an original recipe I made up. Experimenting with Andes peppermint chips. These make a great Christmas cookie and they are really attractive.

Ingredients
  • 2 1/4 cups flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup butter, softened
  • 1/2 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 2 eggs
  • 1 Tbs. vanilla
  • 1 cup semi-sweet chocolate chips
  • 1 cup Andes Peppermint crunch pieces
  • 1/2 cup coconut
  • 1/2 chopped nuts

Directions
  1. Mix flour, baking soda and salt together in a small bowl. Set aside
  2. Cream butter and sugars until smooth, add vanilla and eggs.
  3. Slowly add flour mixture, mix well
  4. Fold in chocolate morsels, peppermint chunks, coconut and nuts.
  5. Drop by tsp. on ungreased baking sheet. Bake at 350 degrees for 13 minutes or until lightly browned. Do not over bake. Cool on pan for 3 minutes then move to cooling rack.

Oh I just noticed there was a typo on the flour. They should only have 2 1/4 cup of flour. I'll try to fix it.
