Lemon Salad

- * 2 (4-serving) pkgs JELL-O sugar-free lemon gelatin shopping list
- * 2 cups boiling water shopping list
- * 1 (8-ounce) can crushed pineapple, packed in fruit juice, drain and shopping list
- reserve juice shopping list
- * 1 cup Cool Whip Free shopping list
- * 4 marachino cherries, chopped shopping list
- * 1 cup fat-free cottage cheese shopping list
How to make it
- In a large bowl, combine dry gelatin and boiling water. Mix well to
- dissolve gelatin. Add enough water to reserved pineapple juice to make 1 1/2 cups liquid. Add to gelatin mixture. Mix well to combine.
- Stir in pineapple.
- Refrigerate until partially set. Gently fold Cool Whip Free, cherries, and cottage cheese. Evenly pour into an 8-by-8-inch dish.
- Refrigerate until firm, about 3 hours. Cut into 8 servings.
