Quick Red Beans and Sausage

- 2 cans pinto beans (I use Luck's brand of seasoned pinto beans which doesn't need to be rinsed or drained) shopping list
- 1 lb package kielbasa or smoked sausage, sliced into 1" pieces shopping list
- 1 medium onion, coursely chopped shopping list
- 1 cup long-grain rice shopping list
- Zatarain's red bean seasonings mix shopping list
- water shopping list
How to make it
- Coursely chop one medium yellow onion and place in small microwavable bowl.
- Microwave on HIGH for several minutes, covered
- Open and place contents of two cans of pinto beans into large saucepan.
- Add onions to saucepan.
- Slice sausage into 1" pieces and add to saucepan.
- Add 1T of Zatarain's red bean seasonings mix to one bean can of water. You can add more here, depending on how spicy you like it.
- Stir and add to saucepan.
- Simmer on low, covered, for 20 minutes.
- While beans and sausage are simmering make the rice.
- Put two cups of water into a medium saucepan.
- Bring to boil.
- Add a little salt to the water and pour in one cup uncooked rice
- Stir, cover and cook on low for twenty minutes.
- When rice is done, fluff it with a fork.
- Put a serving of rice in a pasta bowl or wide soup bowl.
- Stir bean/sausage mixture and spoon a large serving or mixture on top of the rice. Serve.
- Note: Some people like lots of rice and little pot juice. Some like lots of juice and little rice. You serve it your way!
