Only four main ingredients and a few minutes of prep and you can have this Cajun basic for supper. Make it as mild or spicy as your family wants. Great on a cold, rainy day!

Ingredients
  • 2 cans pinto beans (I use Luck's brand of seasoned pinto beans which doesn't need to be rinsed or drained)
  • 1 lb package kielbasa or smoked sausage, sliced into 1" pieces
  • 1 medium onion, coursely chopped
  • 1 cup long-grain rice
  • Zatarain's red bean seasonings mix
  • water

Directions
  1. Coursely chop one medium yellow onion and place in small microwavable bowl.
  2. Microwave on HIGH for several minutes, covered
  3. Open and place contents of two cans of pinto beans into large saucepan.
  4. Add onions to saucepan.
  5. Slice sausage into 1" pieces and add to saucepan.
  6. Add 1T of Zatarain's red bean seasonings mix to one bean can of water. You can add more here, depending on how spicy you like it.
  7. Stir and add to saucepan.
  8. Simmer on low, covered, for 20 minutes.
  9. While beans and sausage are simmering make the rice.
  10. Put two cups of water into a medium saucepan.
  11. Bring to boil.
  12. Add a little salt to the water and pour in one cup uncooked rice
  13. Stir, cover and cook on low for twenty minutes.
  14. When rice is done, fluff it with a fork.
  15. Put a serving of rice in a pasta bowl or wide soup bowl.
  16. Stir bean/sausage mixture and spoon a large serving or mixture on top of the rice. Serve.
  17. Note: Some people like lots of rice and little pot juice. Some like lots of juice and little rice. You serve it your way!
