Hummingbird Cake With Cream Cheese Frosting Recipe
INCREDIBLE! I strongly recommend using pecans over any other type of nut. I've tried using other kinds, but the pecans just add that special something!

Ingredients
  • 3c. flour
  • 2c. sugar
  • 1t. baking soda
  • 1t. salt
  • 1t. cinnamon
  • 3 lrg. eggs
  • 1c. vegetable oil
  • 1&1/2t. vanilla
  • 8oz. can crushed pineapple with juice
  • 1c. chopped pecans
  • 2c. chopped ripe bananas
  • FROSTING:
  • 8oz. cream cheese
  • 1/2c. unsalted butter; softened
  • 16oz. confectioners sugar
  • 1t. vanilla
  • 1/2c. chopped pecans; toasted (garnish)

Directions
  1. CAKE:
  2. Combine 1st 5 ingredients.
  3. Add eggs & oil and stir until all dry ingredients are moistened. ..DO NOT BEAT!
  4. Stir in vanilla, pineapple with juice, pecans & bananas.
  5. Divide batter amongst 3-8" prepared baking pans.
  6. Bake 25-30 min.@ 350F.
  7. Coll 10 mintues & then invert cakes out onto wire racks to cool completely.
  8. FROSTING:
  9. Cream together the cream cheese & butter until smooth.
  10. Add confectioners sugar in small increments until all is combined.
  11. Stir in vanilla.
  12. ASSEMBLY:
  13. Lightly toast pecans & let cool.
  14. Spread frosting between layers and on sides & top of cake.
  15. Sprinkle top with toasted pecans.
