How to make it

  • CAKE:
  • Combine 1st 5 ingredients.
  • Add eggs & oil and stir until all dry ingredients are moistened. ..DO NOT BEAT!
  • Stir in vanilla, pineapple with juice, pecans & bananas.
  • Divide batter amongst 3-8" prepared baking pans.
  • Bake 25-30 min.@ 350F.
  • Coll 10 mintues & then invert cakes out onto wire racks to cool completely.
  • FROSTING:
  • Cream together the cream cheese & butter until smooth.
  • Add confectioners sugar in small increments until all is combined.
  • Stir in vanilla.
  • ASSEMBLY:
  • Lightly toast pecans & let cool.
  • Spread frosting between layers and on sides & top of cake.
  • Sprinkle top with toasted pecans.
