For a great lunchbox, treat, wrap leftover meat loaf slices in a tortilla and top with your favorite taco toppings such as salsa, sour cream, grated cheese and shredded lettuce.

Ingredients
  • 1 envelope onio soup mix, onion-mushroom soup mix or beefy onion soup mix
  • 2 pounds ground beef
  • 2 cups (3 oz) cornflakes, crushed
  • 1 1/2 cups frozen or drained canned whole kernel corn
  • 1 small green bell pepper, choped
  • 2 eggs
  • 3/4 cup water
  • 1/3 cup ketchup

Directions
  1. Preheat oven to 350 degrees. In a large bowl, combine all ingredients.
  2. In 13 x 9 inch baking pan or roasting pan, shape into loaf.
  3. Bake uncovered 1 hour or until done. Let stand 10 minutes before serving.
  4. Serve, if desired, with salsa.
