Poverty Pudding Recipe
I found this recipe in a circa 1930's community cookbook that my Mom grew up with in Kansas...cover is long gone! I thought it was interesting. It was entered by Beatrice M Clark

Ingredients
  • 1 Qt corn Flakes
  • 1 Qt milk
  • 2 eggs
  • 1/4 tsp cinnamon
  • vanilla (no measurement)
  • 1/2 tsp salt
  • 1/4 c molasses
  • 1/4 c sugar
  • 1.4 tsp ginger

Directions
  1. Stir all together and place inpieces of butter on top in a buttered baking dish.
  2. Place dish in a pan of hot water and bake 3/4 to 1 hour in a moderate oven. 350 degrees

What amount do you think is a quart of corn flakes?


Haven't a clue......I was going to going by the ounce measurement on the box.......does that make sense?


4 cups equal 1 quart...great post btw! love the name too! It will be a lot like baked custard, you might like to add a water bath - check out your baked custard recipes - and you will see what I mean... I checked mine to make sure - it's done when a knife comes out clean, then carefully remove dish out of water bath to let cool on counter...
