How to make it

  • Preheat oven to 180 degrees Celsius.
  • Butter 6 ramekins and place on baking tray.
  • Place chocolate and butter in double boiler and let melt together, stirring every so often.
  • In the meantime, beat together the whole eggs, egg yolks and castor sugar until pale in colour.
  • Next beat in the chocolate-butter mixture.
  • Now sift in the flour and fold in carefully.
  • Divide between the ramekins and bake for 10-12 minutes, depending on your oven.
  • The trick is to bake them until they've risen and the tops look like flat cakes, but are still saucy inside. Take care not to bake them until the tops crack as they won't have as much sauce.
  • Turn out carefully onto dessert plates and serve with ice cream.
  • They are best eaten as they come out of the oven so if you're doing them as dessert, the uncooked batter can be poured into the ramekins, covered with clingfilm and refrigerated - increase baking time to about 15 minutes if batter was in fridge. This dessert can also be frozen in the same way, and then needs to be cooked for about 25 minutes
