How to make it

  • Preheat oven to 350 degrees.
  • In a large bowl,mix together cookie crumbs,confectioners' sugar,and 1/3 cup cocoa.
  • Add melted butter and mix well.
  • Press into bottom of 9" springform pan.
  • Bake 10 minutes. Set aside. Increase oven temperature to 450 degrees.
  • In a large mixing bowl,combine cream cheese,sugar,1/4 cup cocoa,and flour. Beat at medium speed until blended and smooth.
  • Add eggs,one at a time,beating well after each addition.
  • Blend in sour cream and Irish Cream. Beat on low speed.
  • Pour into prepared crust.
  • Bake at 450 degrees for 10 minutes. Reduce oven temperature to 250 degrees and bake for 60 minutes.
  • Loosen cheesecake from the rim of pan with a knife. Let cool.
  • Chill before serving.

    Not sure how I will ever get to make all of the cheesecakes that I have bookmarked from here. Bookmarking this delicious looking cheesecake nevertheless. :)
