Roast Leg Of Lamb Recipe

Ingredients
  • 5-6 lb leg of lamb
  • 1 bulb garlic peeled
  • salt and pepper
  • 1 tsp rosemary
  • 1 tsp basil
  • 1 tsp thyme
  • 1 tsp taragon

Directions
  1. Place rack in bottom of large roaster
  2. add about 1 inch water or just below the rack
  3. cut slits in roast and insert garlic cloves all over roast
  4. mix herbs, salt and pepper
  5. Rub roast well with herb mixture
  6. Place fat side up in roaster
  7. cover and roast in a 325 degree oven aproxamately 2 1/2 hours or untill beautifully browned and tender.
  8. The water in the bottom creates a stem that cooks the meat and keeps it deliciously moist. Check occasionally during cooking and add more water if needed.
