This is a wonderful Middle Eastern sandwich. It is crispy, flavorful and healthy

Ingredients
  • Falafel
  • 1 can garbonzo beans mashed
  • 1 onion chopped fine
  • 2 tbs chopped garlic
  • 3 tbs chopped parsley
  • 1 tsp corriander
  • 1 tsp cumin
  • 2 tbs flour
  • 1 tsp salt
  • pepper
  • oil for frying
  • Tahini sauce dressing
  • 1/2 cp tahini (can be bought in most large grocery stores)
  • 2 tbs chopped garlic
  • 2 tbs olive oil
  • 2 tsp vinegar (Ilkie apple cider)
  • 1/02 tsp salt
  • 1/4 tsp pepper
  • 2 tbs lemon juice
  • 1/4 cp chopped parsley 1/2 cp water
  • Oil and vinegar dressing
  • 3 tbs olive oil
  • 6 tbs rice vinegar
  • 1/2 tsp salt
  • 1 tsp finely minced garlic
  • 8 Pita breads
  • shredded letuce
  • chopped tomatoes
  • cucumber slices
  • thinly sliced red onion

Directions
  1. Mash garbonzo beans
  2. add remaining ingredients
  3. mix well
  4. drop by tsp fulls into hot oil
  5. fry til brown
  6. drain on paper towels
  7. For tahini sauce combine all ingrediens except parsley in blender.
  8. Blend until very smooth
  9. add parsley and blend until very small but not completely blended
  10. For oil and vinegar dressing combine all ingredients and whisk together
  11. Heat Pitas and split
  12. Place three falafels in pocket
  13. add remaining veggies and top with either the tahini sauce or the oil and vinegar. This is so good and is really wonderful on a hot summer day served with ice cold beer or lemonade.
