I'm too wimpy for these, but Bryan LOVES them! Easy and great if company is coming. From Biltmore: Our Table to Yours cookbook. Can freeze the Chipotle Honey Butter mixture ahead of time, and use it on anything you so desire!

Ingredients
  • 1 chipotle chile in adobo sauce, pureed
  • 1 c (2 sticks) unsalted butter, softened
  • Juice of 3 limes
  • 1 T honey
  • 1 T chopped cliantor
  • 2 T salt
  • 4 sweet potatoes

Directions
  1. Combine all ingredients except potatoes in a bowl and mix well
  2. Shape into logs and wrap in waxed paper
  3. Can be frozen at this point, bring to room temp when ready to use
  4. Preheat oven to 350
  5. Place sweet potatoes on a baking sheet and roast for 1.5 hours, or until very tender and oozing natural sugar
  6. Cool slightly and peel, discarding the skins
  7. Mash the sweet potatoes with a fork in a large bowl
  8. Add the butter mixture and mix well
