Chipotle Honey Sweet Potatoes

Ingredients
- 1 chipotle chile in adobo sauce, pureed shopping list
- 1 c (2 sticks) unsalted butter, softened shopping list
- juice of 3 limes shopping list
- 1 T honey shopping list
- 1 T chopped cliantor shopping list
- 2 T salt shopping list
- 4 sweet potatoes shopping list
How to make it
- Combine all ingredients except potatoes in a bowl and mix well
- Shape into logs and wrap in waxed paper
- Can be frozen at this point, bring to room temp when ready to use
- Preheat oven to 350
- Place sweet potatoes on a baking sheet and roast for 1.5 hours, or until very tender and oozing natural sugar
- Cool slightly and peel, discarding the skins
- Mash the sweet potatoes with a fork in a large bowl
- Add the butter mixture and mix well
