Ingredients
  • 6 boneless, skinless chicken breasts, pounded thin
  • 6 slices bacon
  • 8 oz. cheddar cheese, cubed
  • 1 bottle of your favorive bbq sauce
  • toothpicks
  • Bundles can be made a day ahead, they take a while to put together.

Directions
  1. Place bacon in an "x" on a cutting board.
  2. Put one chicken breast on top of bacon.
  3. Add a chunk of cheddar cheese to center of chicken breast.
  4. Roll chicken into a bundle around the cheese, using the bacon to wrap the chicken. Secure bacon around chicken bundle with toothpicks.
  5. Grill over indirect heat for 35-40 minutes.
  6. Baste with bbq sauce for the last 10 minutes.
  7. Grill over direct heat to crisp up the bacon for the last 3-5 minutes of cooking.
  8. I have made this using blue cheese and hot wing sauce in place of the cheddar and bbq sauce. Great for parties!
