Taco Cheesecake

- 1 1/2 c crushed tortilla chips (plain or flavored) shopping list
- 1 T butter or margarine, melted shopping list
- 1 lb ground beef or chuck, 93% lean shopping list
- 1 (1 1/4 oz) package taco seasoning, divided shopping list
- 1 small can green chiles, drained shopping list
- 2 T water shopping list
- 2 (8 oz) packages cream cheese, softened shopping list
- 2 large eggs shopping list
- 1 (8 oz) package grated mexican flavor cheese (or your favorite) shopping list
- 1 (8 oz) container sour cream shopping list
- 2 T all-purpose flour shopping list
- Garnishes: sliced ripe olives, chopped tomatoes, shredded lettuce, chopped green onion shopping list
How to make it
- Preheat oven to 325 degrees
- Mix together chips and butter, and press into bottom of 9-inch springform pan (or 9-inch deep dish pie pan)
- Bake 10 minutes and cool on wire rack
- Brown beef in alarge skillet over medium heat, stirring to crumble
- Drain and pat dry once pink color has disappeared, if needed
- Return beef to skillet
- Stir in taco seasoning, reserving 1 t. Add water and chiles
- Cook over medium heat, stirring occasionally, about 5 minutes, until liquid evaporates
- Beat cream cheese wiht an electric mixer on medium speed util fluffy
- Add eggs and reserved 1 t taco seasoning
- Beat until smooth
- Beat in cheddar cheese until blended
- Spread cream cheese mixture evenly over tortilla chip crust and up the sides of the pan at least 1 inch
- Spoon in beef mixture
- Spread cream cheese mixture from around sides of pan over beef mixture, forming a 1-inch border
- Comine sourcream and flour, and spread over cheesecake
- Bake 25 minutes
- Cool on a wire rack for 10 minutes
- Run a knife around edges and release sides
- Serve warm, with toppings as a main dish or appetizer.
