Yummiest Eatyounger Flaxseed Muffin

- 11/2 cups wholewheat flour shopping list
- 1/2 cup flax seeds freshly ground shopping list
- 2 tsp. baking powder shopping list
- 1/2 tsp. salt shopping list
- 1/3 cup brown sugar shopping list
- 1/ 3 cup orange flavored cranberries shopping list
- 1/3 white raisins shopping list
- 1/2 cup sliced almonds or pecans shopping list
- 1tsp. apple pie spice and 1/2 tsp of freshly grated nutmeg shopping list
- 1 large egg and one large egg white shopping list
- 1/2 cup canola oil shopping list
- 1 cup low sugar, calcium fortified soy milk shopping list
- 1 tsp almond essence shopping list
How to make it
- Preheat the oven to 425 F
- Grease muffin pans with melted butter
- To a large bowl add flour, freshly ground flax seed, baking powder, and salt
- Add applepie spice and grated nutmeg to flour mixture
- Add nuts, raisins and cranberries to the bowl
- In a blender mix the egg and eggwhite, oil, soymilk, and almond essence for 15 seconds
- Make a well in the dry ingredients in the bowl and add the wet ingredients to the bowl and gentle fold into the dry ingredients until just mixed
- Using a large spoon transfer the mixture to the prepared muffin tins and bake 25 minutes
- Makes 8 -9 regular size muffins
- Serve warm or freeze for up to 2 months
- Serving size is one muffin.
