Ingredients
  • 11/2 cups wholewheat flour
  • 1/2 cup flax seeds freshly ground
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/3 cup brown sugar
  • 1/ 3 cup orange flavored cranberries
  • 1/3 white raisins
  • 1/2 cup sliced almonds or pecans
  • 1tsp. apple pie spice and 1/2 tsp of freshly grated nutmeg
  • 1 large egg and one large egg white
  • 1/2 cup canola oil
  • 1 cup low sugar, calcium fortified soy milk
  • 1 tsp almond essence

Directions
  1. Preheat the oven to 425 F
  2. Grease muffin pans with melted butter
  3. To a large bowl add flour, freshly ground flax seed, baking powder, and salt
  4. Add applepie spice and grated nutmeg to flour mixture
  5. Add nuts, raisins and cranberries to the bowl
  6. In a blender mix the egg and eggwhite, oil, soymilk, and almond essence for 15 seconds
  7. Make a well in the dry ingredients in the bowl and add the wet ingredients to the bowl and gentle fold into the dry ingredients until just mixed
  8. Using a large spoon transfer the mixture to the prepared muffin tins and bake 25 minutes
  9. Makes 8 -9 regular size muffins
  10. Serve warm or freeze for up to 2 months
  11. Serving size is one muffin.
