How to make it

  • Preheat the oven to 425 F
  • Grease muffin pans with melted butter
  • To a large bowl add flour, freshly ground flax seed, baking powder, and salt
  • Add applepie spice and grated nutmeg to flour mixture
  • Add nuts, raisins and cranberries to the bowl
  • In a blender mix the egg and eggwhite, oil, soymilk, and almond essence for 15 seconds
  • Make a well in the dry ingredients in the bowl and add the wet ingredients to the bowl and gentle fold into the dry ingredients until just mixed
  • Using a large spoon transfer the mixture to the prepared muffin tins and bake 25 minutes
  • Makes 8 -9 regular size muffins
  • Serve warm or freeze for up to 2 months
  • Serving size is one muffin.
