Spicy Lentil and Leek Soup

- 2 cups of green (preferrable) lentils soaked overnight and cooked until tender shopping list
- 1 large leek sliced finely shopping list
- large knob of butter shopping list
- 3 cloves of garlic, chopped shopping list
- 1/1.2 ltr of good chicken stock shopping list
- some cream or yogurt (few tablespoons) shopping list
- 1 tsp cayenne pepper shopping list
- handful of fresh chopped parsley shopping list
- salt and pepper shopping list
How to make it
- sweat the leek and garlic with the butter and cayenne until soft
- Add the cooked lentils and stock on a low heat until boiling
- remove half the mixture and blend and add back into the pot
- salt and pepper to taste and serve with chopped parsley and a little swirl of cream or yogurt and some bread

I had to add some apple flavored sausage in for my husband, but this was really tasty. I love lentils, we have them once a week, in different ways. So it was nice to try this one out.
