Cover it up Omelet

- (10-ounce) package frozen chopped spinach shopping list
- 3 tablespoons cream cheese, softened shopping list
- 3 tablespoons milk shopping list
- 3 tablespoons crumbled feta cheese shopping list
- 8 large eggs shopping list
- 3 tablespoons water shopping list
- 1/4 teaspoon dried oregano shopping list
- 1/2 teaspoon garlic powder shopping list
- 1/8 teaspoon of cayenne shopping list
- 1/4 teaspoon kosher salt shopping list
- 1/8 teaspoon coarse ground black pepper shopping list
- 1 tablespoon butter, divided shopping list
- 1 ounce parmesan cheese, grated shopping list
- 2 med. tomatoes shopping list
How to make it
- Cook spinach according to package directions; drain well and place in processor.
- Add cream cheese, milk and feta; process to combine or stir with a spoon.
- In a large bowl, whisk eggs, water, oregano, salt , pepper, cayenne and garlic..
- In a large (12-inch) nonstick skillet, melt butter over medium-high heat until sizzling.
- Add egg mixture.
- As edges set, move toward center with a spatula, allowing the uncooked egg to run to side.
- When top is set, spoon spinach mixture over omelet, top with Parmesan cheese, cover and cook for 1 minute.
- Fold omelet in half and slide onto a plate.
- If your omelet doesn't look very pretty, don't worry just cover it with thinly sliced tomatoes :0

I thought I had made every kind of omelette. I was wrong, this sounds tasty. LIttle man loves to cook I think we will try this one on Saturday!
