A twist on Alfredo...Great dish for any spinach lover...Can even throw in a handful of cooked chicken if you desire

Ingredients
  • 1 pkg. fettucinne
  • 2 tbls. pine nuts, toasted
  • 2 tbls. olive oil
  • 1 onion, chopped
  • 2 tbls. flour
  • salt and pepper to taste
  • 2 1/2 cups milk
  • 1 10 oz. frozen spinach, thawed and squeezed dry
  • 1/3 cup parmesan cheese, grated

Directions
  1. Cook fettucinne, according to pkg. directions
  2. Drain, reserving 1/4 cup pasta liquid
  3. In a large skillet, heat olive oil and cook onions until tender
  4. Stir in flour salt, and pepper
  5. Cook 1 minute
  6. Gradually add milk, stirring until until mixture is thick and smooth
  7. Stir in spinach, cheese, and pasta water
  8. Stir in fettucinne and heat through
  9. Sprinkle with pine nuts
