CHICKEN AND POTATO CAKES

- 3 Jumbo eggs shopping list
- 200 ml milk shopping list
- 125 g flour shopping list
- Sale & freshly ground pepper shopping list
- 500 g potatoes, peeled and coarsely grated shopping list
- 225 g onions, thinly sliced shopping list
- 225 g cooked chicken, cut into slivers shopping list
- 1 x 200 g Can sweetcorn kernels, drained shopping list
- 45 ml oil shopping list
- 45 ml butter shopping list
- * You can add chillies etc to the recipe shopping list
How to make it
- Blend the eggs, milk, flour and seasonings together in a food processor. * I prefer to keep it rustic.
- Chill
- Meanwhile, blanch the potato and onion in boiling salted water for about 2 minutes.
- Drain well, taking care to press out as much liquid as possible
- Stir the chicken slivers, sweetcorn, potato and onion into the chilled batter.
- Make certain to mix well.
- Heat the oil and butter in a frying pan.
- Spoon heaped tablespoons of the mixture into the pan.
- Flatten slightly and fry for about 4 minutes on each side.
- This makes about 12 cakes.
- Once cooked keep them warm by placing them, uncovered, in a low oven.
- Or, use more than one pan and increase the oil and butter.
- * Serve with a nice green salad (see my Spinach & Mushroom Salad)
