How to make it

  • Blend the eggs, milk, flour and seasonings together in a food processor. * I prefer to keep it rustic.
  • Chill
  • Meanwhile, blanch the potato and onion in boiling salted water for about 2 minutes.
  • Drain well, taking care to press out as much liquid as possible
  • Stir the chicken slivers, sweetcorn, potato and onion into the chilled batter.
  • Make certain to mix well.
  • Heat the oil and butter in a frying pan.
  • Spoon heaped tablespoons of the mixture into the pan.
  • Flatten slightly and fry for about 4 minutes on each side.
  • This makes about 12 cakes.
  • Once cooked keep them warm by placing them, uncovered, in a low oven.
  • Or, use more than one pan and increase the oil and butter.
  • * Serve with a nice green salad (see my Spinach & Mushroom Salad)
