CHICKEN AND POTATO CAKES Recipe
For those easy and lazy days, when the sun is hot & blazing and you need to fill that gap in your tummy with something wholesome but still enjoyable

Ingredients
  • 3 Jumbo eggs
  • 200 ml Milk
  • 125 g Flour
  • Sale & freshly ground pepper
  • 500 g Potatoes, peeled and coarsely grated
  • 225 g Onions, thinly sliced
  • 225 g Cooked chicken, cut into slivers
  • 1 x 200 g Can sweetcorn kernels, drained
  • 45 ml oil
  • 45 ml butter
  • * You can add chillies etc to the recipe

Directions
  1. Blend the eggs, milk, flour and seasonings together in a food processor. * I prefer to keep it rustic.
  2. Chill
  3. Meanwhile, blanch the potato and onion in boiling salted water for about 2 minutes.
  4. Drain well, taking care to press out as much liquid as possible
  5. Stir the chicken slivers, sweetcorn, potato and onion into the chilled batter.
  6. Make certain to mix well.
  7. Heat the oil and butter in a frying pan.
  8. Spoon heaped tablespoons of the mixture into the pan.
  9. Flatten slightly and fry for about 4 minutes on each side.
  10. This makes about 12 cakes.
  11. Once cooked keep them warm by placing them, uncovered, in a low oven.
  12. Or, use more than one pan and increase the oil and butter.
  13. * Serve with a nice green salad (see my Spinach & Mushroom Salad)
