Hoisin Chicken - South Beach

- 3 lbs boneless skinless chicken breast halves, cut into chunks shopping list
- 1/4 c hoisin sauce (I use Whole Foods 365 organic - 3g sugar/serving) shopping list
- 1/4 c sugar free apricot jam shopping list
- 1/4 c low sodium soy sauce shopping list
- 1 small pc ginger root, grated (I've used ground ginger in a pinch) shopping list
- juice of 1 lime shopping list
- 3 T cornstarch shopping list
- salt & pepper to taste shopping list
- 1-2 cloves garlic, minced shopping list
How to make it
- Mix all ingredients except chicken together in a bowl
- Add chicken and stir to coat
- Put it all in the slow cooker
- Cook on low 5-6 hours
