This refreshing chicken salad is great during the summer. It is light tasting with crunch and a light sweetness to it. Goes great on Croissants or Romain lettuce

Ingredients
- 2 1/2 cups diced cold chicken breasts
- 1 cup celery chopped fine
- 1 cup sliced red or white grapes
- 1/2 cup sliverd almonds TOASTED
- 2 Tbs minced parsley
- 1 tsp salt (to taste)
- 3/4 cup of mayonnase (real mayo not salad dressing)
- 3/4 cup Cool Whip
Directions
- Season chicken breasts to taste
- Bake chicken @ 400 for 20-25 min depending on thickness
- Cube or pull COLD chicken breasts
- Mix the rest of the ingredients with chicken
- Serve over Romain lettuce leaves or Croissants
