This is my original version. I also make this a lowfat version. Can't tell the difference!

Ingredients
  • 4 cups of chopped cooked chicken ( I use chicken breasts)
  • 1 pkg. fettucine noodles
  • 1 can of Rotel tomatoes (as spicy as you like)
  • 1 lb. box of velveeta cheese (or reduced velveeta)
  • 1 can cream of mushroom soup( or reduced)
  • 1 can cream of chicken soup (or reduced)
  • 1 can of evaporated milk(or skim
  • 1/2 cup butter
  • 2 cups chopped onions
  • 1 cup chopped bell pepper
  • salt & pepper
  • creole seasoning

Directions
  1. Normally, I boil my own chicken and use the broth to boil the noodles
  2. You can use leftover baked chicken and de-bone it and chop it up
  3. Saute onions & bell pepper in butter
  4. add soups, rotel tomatoes and cook on low for a few mins.
  5. Add velveeta cheese that has been cut up for easier melting
  6. Add can of evaporated milk, stir well.
  7. Mix in chicken and noodles
  8. stir well, put into a greased casserole and bake at 350
  9. for 20-30 mins.
  10. this is a great meal with a salad or side vegatable.
